Product description

The technique

Flipping an okonomiyaki in one motion, scraping the teppan griddle between cooks, or gathering strips of meat and vegetables without piercing them as tongs would.

Why it is different

A wide, curved blade with slightly raised edges that forms a small shovel capable of sliding under an entire portion without losing a single piece. The wooden handle is secured with three brass rivets, with a hanging hole near the blade.

Why this spatula over a Western one

The width of the blade and its raised edges make all the difference compared to a narrower, flat Western spatula; here, nothing escapes during the flipping motion. An unsigned vintage piece, it carries a genuine patina from use: one side remains shiny, while the other has darkened from repeated contact with heat and food, which makes each piece slightly different from the next.

Why I chose it

"I chose this spatula because it is a very good example of a tool whose form stems directly from its environment. On a teppan, you don't work like you do in a classic pan: you need to be able to seize, flip, move, and sometimes scrape food. I like this very direct approach to design: start from the gesture and the context, then build the tool around that."

You will like it if

  • you cook or want to discover teppan cooking (okonomiyaki, yakisoba)
  • you like objects whose form stems directly from the gesture and cooking context
  • you appreciate a real patina from use rather than a uniform new object

It is probably not for you if

  • you never cook on a hot plate
  • you are looking for a perfectly new and symmetrical object

In practice

Stainless steel, wooden handle, brass rivets. Estimated dimensions: total length approximately 30 cm, blade width approximately 15 cm (to be confirmed by direct measurement). Wash by hand, dry immediately, no dishwasher. A little cooking oil from time to time on the handle keeps the wood supple.

An object built to last

The blackening visible on one side is not an applied tint but the natural oxidation of the metal from repeated contact with heat, a sign of real use rather than a defect on an object already designed to last.
