Product description

The gesture

Hold the handle in one hand, press the ingredient against the surface with the other, and grate in small circles rather than back and forth in a straight line as with a Western grater.

Why it is different

Hundreds of fine points, punched one by one into the sheet metal rather than engraved by a continuous machine, arranged in a staggered pattern to slice the fibre rather than crush it. The uneven relief evokes sharkskin (same, 鮫), hence the name of the Samekichi range.

Why this grater rather than a classic one

Originally designed for fresh wasabi, it produces a fine, creamy paste in a few circular passes, far from the coarse texture of a classic grater. It also works for ginger, garlic, daikon or yuzu.

Why I chose it

"I chose this grater because it reminded me of something I often find in Japanese utensils: an almost disproportionate attention paid to a very simple gesture. Grating ginger or wasabi seems trivial, but the texture you get depends enormously on the tool. I like these objects that don't promise to do more, but simply let you do better."

You will love it if

  • you grate fresh wasabi, ginger or daikon and want a fine texture rather than a coarse one
  • you appreciate a piece made by a house specialising in metal utensils for over a century
  • you want a compact tool you can hang up (pierced handle)

It is probably not for you if

  • you never cook with fresh wasabi, ginger or daikon
  • you are looking for a grater for large quantities of vegetables

In practice

Stainless steel, 18 × 9 cm, pierced handle for hanging. Made by Tsuboe, a house specialising in metal utensils for over a century, based in Tsubame-Sanjo (Niigata). Rinse immediately in lukewarm water with a small brush if needed, dry carefully, and avoid the dishwasher, which can dull the polish.

An object made to last

The points, punched one by one, withstand repeated use without losing their ability to slice the fibre, provided it is dried carefully after each use.

Frequently Asked Questions

Why is this grater particularly suited to fresh wasabi?

Its fine staggered points cut the fibre rather than crushing it, producing a fine, creamy paste rather than a coarse texture.

Is it only for wasabi?

No, it also suits ginger, garlic, daikon or yuzu.

Who makes this grater?

Tsuboe, in its Samekichi range, made in Japan.

How to use it?

A Japanese grater is a small table tool used to prepare fresh condiments at the last minute: ginger, wasabi, garlic, daikon.
What it is for: grating just before serving gives a livelier aroma. You place the result beside the dish as a seasoning.
Hold the handle in one hand, press the ingredient against the surface with the other and turn in small circles, rather than going back and forth in a straight line as with a Western grater.
Grate a piece of fresh ginger or a tip of wasabi: you get a fine paste rather than strands, to serve right away beside sashimi or a soup.
It also suits garlic, daikon or yuzu.
Rinse straight away in lukewarm water, with a small brush if needed, and dry carefully. Avoid the dishwasher, which can dull the polish.
Idea: also try it for homemade sauces, a ginger dressing, a ponzu sauce or a seasoning for meat.
Good to know: rinse it right after use: fibres dry quickly and are harder to remove later.

Freshly grated wasabi to accompany sashimi, or grated ginger for a bowl of udon noodles (at your discretion).
